Haruhide Morita won the National Tea Quality Judging Skills Competition three times in 1970, 1981, and 1992, and also was awarded by the Minister of Agriculture, Forestry, and Fisheries. "Hiire" - the roasting process that breathes life into crude tea

This process is the finishing of crude tea that has been carefully selected by the tea master, Haruhide Morita. Tea masters involved in this process usually put their hearts and souls into getting the best out of the tea, including its taste and aroma. Roasting, or "Hiire," as the most important process for Japanese tea removes the moisture percentage to 2% or less to control the green taste and produce a rich aroma and flavor. Tea Master Haruhide Morita finely adjusts the fire temperature and roasting time according to the characteristics of each carefully selected tea leaf. This fine adjustment depends entirely on the long experience gained since the beginning of the apprenticeship. Our passion for bringing delicious Japanese tea to our customers makes us never compromise in this process. Tea Master Haruhide Morita says: "Hiire is the life of tea."
